Pasta with Bottarga

Ingredients for 4 people:

320 g homemade pasta, 40 g bottarga – dried mullet roe, 4 tbs olive oil, garlic clove, chili pepper, salt

Instructions:

Cook the homemade pasta »al dente«. Lightly fry the garlic in the pan. Add the cooked pasta and some of the leftover pasta water. Add homemade olive oil, chili pepper and salt to taste. Enhance the dish by grating the bottarga (dried mullet roe) over it. The pasta is almost ready: mix everything until you achieve the desired consistency. Ensure there's just enough liquid to keep the dish moist and juicy, but nothing should be able to float in it.
