Clams with bavette (pasta)

Recipe by Restaurant Manjada

Ingredients for 4 persons:

-        400 g of bavette,

-        1 kg mixed clams (mussels, smooth clams, cockles)

-        0,5 dcl olive oil,

-        1 dcl white wine (Malvasia),

-        chopped garlic clove,

-        a bunch of parsley,

-        fish stock,

-        butter and parmesan cheese according to taste.

 

Sauté the garlic in olive oil, add the smooth clams and cockles, pour over the wine and fish stock. Cover the pan so that the clams open. In a separate pan, cook the mussels so that they release salt water.
