Local calamari with onion


Ingredients for 1 person:

  • 1 fresh calamari (from the Adriatic Sea), 0,5 dcl white wine, 2 onions, olive oil,  salt


Begin by cleaning the calamari under running water. If they contain eggs (roe), do not remove them. Drain the calamari and then make gentle slits on top of them. Season the calamari with salt and olive oil, then place them on the grill. Grill them slowly until they attain a nice brown color. While grilling, chop the onion. When the calamari are about ¾ grilled, place the chopped onion on top. Drizzle some olive oil and white wine over everything. Continue grilling until the onion turns brownish, then add a little more salt if needed before serving on a plate.
